Broccoli Paratha Full

Broccoli Peas Paratha is a variety of stuffed roti. It’s my family’s favorite food and toddler approved. What do we need more than this? My toddler is very much fond of broccoli but doesn’t like to eat it in big chunks, hence I always prefer to make broccoli peas paratha. And I’m happy to share my toddler favorite food as my 50th Post. Yeah, this is my 50th post since I have started my blog. Thank you to all my followers for supporting me and motivating me to keep the blog active. So here is the visual treat to all my followers 😉. Without any further delay let’s jump into the recipe.

Ingredients

For the Stuffing

Broccoli – 1 cup
Fresh/Frozen Peas – 1/2 cup
Garam Masala – 1 tsp
Turmeric Powder – 1/2 tsp
Cumin Powder – 1 tsp
Finely Chopped Cilantro – 1/2 tbsp
Oil – 1 tsp
Ghee – 1 tsp (to smear on the paratha)
Salt – as needed

For the Dough

Whole Wheat Flour – 2 Cups
Oil – 1 tbsp
Salt – as needed
Warm water – as needed

Method

For the Dough

  1. In a wide bowl take 2 cups of whole wheat flour, salt and mix it well.
  2. Now oil and crumble the dough.
  3. Add water slowly and make a soft, smooth and a non-sticky dough.
  4. Let the dough rest a while until we prepare the stuffing for the paratha. Keep the dough covered until you start making the paratha.

For the Stuffing

  1. Blanch the broccoli and peas in hot water for 10 mins.
  2.  Grind it to a slightly coarse paste with water.
  3. Heat oil in a pan, add the ground paste to it and saute for 5 mins until the paste thicken.
  4. Now add salt, garam masala, turmeric powder, cumin powder and saute well for another 5 mins or until the mixture thickens. You should be able to make balls out of it, that is the consistency we require.
  5. Add the chopped cilantro and mix it well. Allow it to cool.

For the Paratha

  1. Gently knead the dough once and make it into a log.
  2. Take small portion of the dough and make it into even size balls.
  3. Take one ball of dough, press it gently and sprinkle some wheat flour. Now roll it into 4 to 5 inches round.
  4. Take 1 or 2 table spoon of the stuffing and place it in the center of the rolled dough.
  5. Gather the edges and make a pleat, bring it to the center and press it gently in the center.
  6. Sprinkle some wheat flour and roll it out to a medium size paratha(6 – 7 inches).
  7. Heat a griddle and once hot, carefully place the paratha in the griddle. Cook on both side and until golden brown.
  8. Once cooked, take it on a plate and smear it with ghee on both sides.
  9. Serve it warm with Plain Yogurt or Pickle.

Notes

  1. You can add half cup of warm milk along with water to make the dough super soft.
  2. If you prefer a spicy stuffing, you can either add finely chopped green chillies or red chilli powder/Cayenne pepper/Paprika.
  3. You can also add finely chopped onion to the stuffings.
