Peanut Chutney

Ingredients

Roasted Peanuts – 1/4 cup
Shredded Coconut – 1/4 cup
Salt – as needed
Water – as needed

To Roast

Red Chillies – 2
Coriander Seeds – 1 tbsp
Channa dal -1 tbsp
Desiccated Coconut – 3 tbsp
Oil – 1 tsp

To Temper

Oil – 1 tsp
Mustard Seeds – 1 tsp
Curry leaves – 1 sprig

Method

  1. Heat oil in a pan, roast the ingredients listed under “To Roast” and allow it to cool completely.
  2. Grind the roasted ingredients, shredded coconut and peanuts to a smooth paste along with water.
  3. Temper the Chutney with ingredients listed under “To Temper”
  4. Serve chutney as a side dish for Dosa or Idly.

Notes

  1. You can skip the desiccated coconut and roast the shredded coconut along with other ingredients listed under “To Roast”.
  2. Increase or decrease the amount of red chillies to suit your taste preference.
  3. You can also add a small piece of tamarind for tangy flavor in your chutney.
