Peanut Chutney

Ingredients
Roasted Peanuts – 1/4 cup
Shredded Coconut – 1/4 cup
Salt – as needed
Water – as needed
To Roast
Red Chillies – 2
Coriander Seeds – 1 tbsp
Channa dal -1 tbsp
Desiccated Coconut – 3 tbsp
Oil – 1 tsp
To Temper
Oil – 1 tsp
Mustard Seeds – 1 tsp
Curry leaves – 1 sprig
Method
- Heat oil in a pan, roast the ingredients listed under “To Roast” and allow it to cool completely.
- Grind the roasted ingredients, shredded coconut and peanuts to a smooth paste along with water.
- Temper the Chutney with ingredients listed under “To Temper”
- Serve chutney as a side dish for Dosa or Idly.

I served Peanut Chutney along with Onion Rava Dosai.
Notes
- You can skip the desiccated coconut and roast the shredded coconut along with other ingredients listed under “To Roast”.
- Increase or decrease the amount of red chillies to suit your taste preference.
- You can also add a small piece of tamarind for tangy flavor in your chutney.
