Chayote Squash Stir Fry

Chayote Squash or Chow – Chow vegetable is mostly used for making kootu and Sambar in Indian Cuisine. I decide to make kootu and buy this vegetable but end up making stir fry most of the time due to time constraint in the morning hours. Chayote squash is low-calorie and fiber-rich vegetable. Here is a simple recipe of Stir Fry Chayote Squash/ Chow – Chow.
Ingredients
Chayote Squash – 2
Shredded Coconut – 1/8 cup
Turmeric powder – 1/4 tsp
Sambar powder – 1 tsp
Salt – as needed
To Temper
Oil – 1 tbsp
Mustard seeds – 1 tsp
Red Chilli – 1
Urad Dal – 1 tsp
Curry leaves – 1 sprig
Method
- Chop the squash and boil it in microwave for 10 mins.
- Heat oil in pan, add mustard seeds, red chilli, urad dal and curry leaves. Wait until mustard splutter and urad dal turns golden brown.
- Strain the squash and add it to the pan along with salt, turmeric and sambar powder. Mix well and fry for 3 minutes.
- Add shredded coconut and fry for two more minutes. Switch off the flame and Enjoy!!
