Chayote Squash Stir Fry

Chayote - Stir Fry

Chayote Squash or Chow –  Chow vegetable is mostly used for making kootu and Sambar in Indian Cuisine. I decide to make kootu and buy this vegetable but end up making stir fry most of the time due to time constraint in the morning hours. Chayote squash is low-calorie and fiber-rich vegetable. Here is a simple recipe of Stir Fry Chayote Squash/ Chow – Chow.

Ingredients

Chayote Squash – 2
Shredded Coconut – 1/8 cup
Turmeric powder – 1/4 tsp
Sambar powder – 1 tsp
Salt – as needed

To Temper

Oil – 1 tbsp
Mustard seeds – 1 tsp
Red Chilli – 1
Urad Dal – 1 tsp
Curry leaves – 1 sprig

Method

  1. Chop the squash and boil it in microwave for 10 mins.
  2. Heat oil in pan, add mustard seeds, red chilli, urad dal and curry leaves. Wait until mustard splutter and urad dal turns golden brown.
  3. Strain the squash and add it to the pan along with salt, turmeric and sambar powder. Mix well and fry for 3 minutes.
  4. Add shredded coconut and fry for two more minutes. Switch off the flame and Enjoy!!
