Baby Potato Roast

Potatoes are one such vegetables where no one would say “No” to it. All age group people loves potatoes. There is no exception with my little one too. So, whenever I ask her what vegetable she would like to have for lunch, without any second thought she would say “Potatoes”. This simple baby potato roast is very flavorful and appealing. And Sunday is for Potato curry and Garlic Kuzhambu in our home. So, this will be the usual menu on most Sundays. So, if you plan to stop by please give us a heads-up and we will prepare a scrumptious feast for you 😉

Ingredients

Baby Potatoes – 1 Lb or 450gms
Turmeric Powder – 1/2 tsp
Red Chilli Powder – 1 tbsp
Salt – as needed

To Temper

Oil – 2 tbsp
Mustard seeds – 1 tsp
Jeera – 1 tsp
Red Chilli – 1
Curry leaves – 1 spring

Method

  1. Halve the baby potatoes and steam in pressure cooker for 5 mins or until cooked. The potatoes should be firm yet cooked.
  2. Peel the boiled potatoes and mix salt, turmeric and red chilli powder. Give it a gentle toss to mix everything evenly.
  3. Heat oil is pan add mustard seeds, jeera and red chilli.
  4. Now add torn curry leaves and Potatoes. Mix everything together. Keep stirring in between in medium flame until all the potatoes are roasted.
